Peshawari Palak

Recipe to prepare "Peshawari Palak": Ingredients: 1. spinach - 2-3 bunches 2. tomato - 2 medium size 3. garlic - 6 cloves 4. cooking oil - 1 table spoon 5. sesame seeds - 1 tea spoon 6. ginger (grated) - 1 inch 7. dried (whole) red chilly - 3 8. salt - to taste Procedure: 1. blanch the spinach 2. keep it in cold water for sometime 3. puree it in a blender 4. take 2 tomatoes 5. make a slight cut on tomatoes 6. insert 2 peeled garlic cloves per tomato 7. roast the tomatoes on medium flame 8. remove the skin of roasted tomatoes 9. puree them in a blender 10. heat 1 table spoon cooking oil in a pan 11. add the following ingredients: a. 1 tea spoon sesame seeds b. 2 garlic cloves (chopped) c. 1 inch ginger (grated) d. 3 dried (whole) red chillies in pieces e. roasted tomato puree 12. mix all the ingredients well 13. add spinach puree 14. add little salt 15. stir, and allow it cook for 2-3 minutes Mind-blowing!! Starting Seeds; my working sequence.

Timing is everything. Make sure you know what you are starting & how quickly it grow so you can transplant in a timely manor. Some things should never be started indoors. I make sure the soil in the pots is good and damp before putting in any seed. I never use potting mix. I start w/the soil that is in the garden and as soon as they sprout give them some compost tea. I never discriminate seedling, I plant them all & then make the call later to see if they cut pulled/cut. I label the craft sticks w/ name of plant on front & the seed count on back, to make sure I have a good germ. rate. I always leave lots of space between seeds as not to disturb the roots when transplanting occurs. I use a big serving spoon & knife for this.
